A creamy, soft-rind cow's milk cheese from the Dauphiné region, larger and richer than its cousin Saint-Marcellin. Made by Le Chartrousin in Isère, with milk enriched with cream for an exceptionally smooth, melt-in-the-mouth texture. Mild and lactic when young, with subtle hazelnut notes. Best served at room temperature.
